I came across some fabulous recipes this week that I wanted to share. Of course, for these to qualify as Show Me The Mom meals, they have to be quick, super easy, and there must (must) be a non-healthy version available.
I’ve tried all three myself this week.
The first two meals are very quick and easy, the third tasted fantastic and I had dreams of bringing it to work for lunch, until Jordan THREW MY FOOD OUT while he was cleaning up the kitchen. That was about as smart as throwing out the last piece of leftover cheesecake or pumpkin pie after Thanksgiving. I’m started to wonder about his true maternity. In any case, all three recipes are wonderful, ENJOY!
1. ) Panera Bread Mediterranean Veggie Sandwich: I normally get this at lunch during the work week. It’s wonderful but the restaurant version is a little higher in calories and bread than I prefer. I modified and made up my own versio
n that is very similar to the one below. The vegetables can be marinated in balsamic vinegar and will hold for a few days in your fridge. (It took me 4 minutes to make my dinner tonight.)
Ingredients
- 2 slices Panera Tomato Basil Bread – cut thick (I purchased Flax Rolls from Target. I know, too healthy. This allows me to only take the bread out as I need it, and it’s got some healthy junk in it.)
1/4 C Hummus
1/4 C Feta Cheese ( I was out, used mozerella)
1/4 C Red Peppers (I used banana peppers from the garden, choose your favorite!)
1 Leaf Romaine Lettuce
About 8 slices of peeled cucumber
A couple slices of red onion
1 T Trader Joe’s Cilantro Salad Dressing (I used the balsamic vinegar marinade.)
- Spread hummus on bread, top with feta, layer on veggies, and top with dressing…
- 2.) Macaroni Pizza Casserole: My second recipe comes compliments of Becky (thanks Becky!) I made this one earlier during the week and even my picky kids ate it! I don’t normally eat much pasta and I could not pass this one up! Check out her site using the link above. She included photos for each step of the cooking, which is great for non-cookers like myself. Thanks for letting me share Becky!
- Macaroni Pizza Casserole
Heat oven to 350^.
1 1/2 lb lean ground beef, or ground turkey
1 box of Elbow Macaroni Noodles. (I used the Razoni Smart Taste)
1 Large jar of Ragu with Meat sauce, or any that you prefer.
1 6oz package of Turkey Pepperoni (or regular pepperoni)
2 8oz package of Italian Five Cheeses, low fat
1 package of Hot Italian Sausage, grounded (Johnsonville brand)
Cook the Macaroni noodles according to the package directions. Drain. Set aside.
While the noodles are cooking, brown up your hamburger meat and your hot Italian Sausage. Drain grease. Set aside.
In a 13×9 inch pan, add a layer of the meat, than the noodles, Ragu Sauce, a layer of the pepperoni, and cheese. Repeat steps to make a 2nd layer with the cheese layer having a little more cheese than the 1st layer of cheese.
Bake on 350^ for 30-40 minutes or until browned.
Set aside 5-10 minutes to make it easier to cut.
- 3.)Thai Beef Lettuce Wraps: This is the recipe that was so good and my un-named child THREW OUT when I was done. It was good while it lasted. Actually, it was fantastic, especially if you’re like me and LOVE spicy foods!
- 12 oz flank, skirt, or sirloin steak

- 1/2 tbsp chili sauce
- 1 jalapeno pepper, thinly slice
- 1 tbsp fish sauce
- 1/2 red onion, thinly sliced
- limes, cut into wedges
- 1/2 C chopped fresh cilantro
- 1 carrot, peeled and grated
- 1 head Bibb lettuce, washed and dried, leaves separated

That sandwich looks great! Yum.
The expensive cafe/bistro in my office serves a similar sandwich with sun-dried tomatoes. They add a nice kick of flavor every few bites. I might try your recipe with sun-dried tomatoes to make something similar. Something tells me I can beat their price of $8, lol.
